How to use the Recipe Scaler (Change Servings and Scale Ingredients)

Worked example (recipe for 4, scaled to 6, factor × 1.5)

  • 2 cups plain flour: 3 cups plain flour
  • 1 1/2 tsp salt: 2 1/4 tsp salt
  • 3 eggs: 4 1/2 eggs (use 4 or 5, or beat one and use part of it)
  • 1/3 cup oil: 1/2 cup oil
  • 250 g butter: 375 g butter
  • salt to taste: unchanged

Limitations

  • Only a number at the start of a line is scaled. Numbers in the middle, such as “a 400 g tin”, stay as they are.
  • Unit changes are not made, so 16 tbsp stays as tablespoons.
  • Salt, spices, raising agents, baking times and pan sizes do not always scale in a straight line.
  • Fractions are rounded to the nearest eighth, third or two-thirds when within 0.02, otherwise shown as a decimal.
